納豆は冬の季語ってご存知ですか。毎年、秋冬になると食べたくなる香川の味。手作りの甘納豆です。
香川県高松市香川町の東谷(ひがしたに)。香川県指定無形民俗文化財の農村歌舞伎 祇園座が江戸時代から残る山間集落です。そんな農村の美しい田んぼの風景を縫うように道を進むと、煙突のでた小さな小屋がぽつんと建っており、ほのかに甘い香りが漂っています。『村瀬食品』さんは、自家栽培の豆類や鳴門金時からつくる甘納豆の専門店です。添加剤や防腐剤を使わず昔ながらの製法でつくられており、昔からのファンも多く、初秋から営業がはじまると遠方から車で購入しにお客さんがやってきます。
Amanatto is a type of Japanese confectionery made from candied beans, chestnuts, lotus seeds and slices of sweet potato (called potato natto). Natto is the seasonal word for winter. This handmade sweet natto is a taste of Kagawa Prefecture that I crave every autumn and winter.
Higashitani, Kagawa-cho, Takamatsu City, Kagawa Prefecture. This is a mountain village where the Gionza rural kabuki theatre, a designated Intangible Folk Cultural Asset of Kagawa Prefecture, has remained since the Edo period. As you walk along the road through the beautiful rice paddies of this farming village, you will see a small hut with a chimney and a faintly sweet aroma. Murase Shokuhin specialises in amanatto (sweet fermented soy beans) made from home-grown beans and Naruto kintoki. It is made using traditional methods without additives or preservatives, and has many long-standing fans. When the shop opens in early autumn, customers come from far and wide by car to buy it.

Amanattō is a Japanese traditional confectionery made of azuki or other beans, covered with refined sugar after simmering with sugar syrup and drying. It was developed by Hosoda Yasubei during the Bunkyū years (1861–1863) in the Edo period. He opened a wagashi store in Tokyo, which he named for his childhood name: Eitaro. This store continues to operate.
Amanattō was originally called amananattō; the name was abbreviated to amanattō after World War II. The resemblance of the name to the fermented bean dish nattō is coincidental.
In Hokkaidō, amanattō is used in cooking sekihan. For this reason, unlike other areas in East Asia, the sekihan of Hokkaidō is a little sweet.
