香川の雑煮は、白味噌にあん餅が入った『あん餅雑煮』 – “Anmochi zoni”, local food of Kagawa pref.

香川県の正月の味といえば、白味噌のあんもち雑煮。甘い白味噌に甘いあんこ餅が入っています。ダシは讃岐うどんと同じいりこダシ、具材は、地域や家によって異なり、香川県坂出市が日本一の産地を誇る「金時にんじん」や、里芋、青のりなどはいっています。香川で作られる味噌の約8割は「白味噌」です。

Japanese people traditionally eat ozoni (rice cakes boiled in vegetable soup) on festive occasions. This soup cannot be missed on Japanese dining tables in the New Year season. The ingredients and taste of ozoni differ by region and their specialties and historical backgrounds. Ozoni that is rich in local flavor is eaten in many parts of the country.

In particular, anmochizoni of Kagawa is unique and is often discussed.

This local Kagawa specialty contains radishes, carrots and round rice cakes containing sweet bean paste boiled in a light-brown miso broth. Many round, sliced vegetables are added to convey a wish for the happiness of the family and for everything go smoothly throughout the coming year.

In some areas or households, the ingredients in anmochizoni also include taro, burdock and deep-fried tofu. Hanakatsuo bonito, green spring onion and green laver may also be added after the rice cakes and broth are put in the bowl. (Experience Takamatsu)

なぜ、香川県であんもち雑煮が生まれたのでしょうか。
徳川吉宗が享保の改革で全国にサトウキビの栽培を奨励した際、
高松藩が白い高級砂糖である和三盆を特産品にしました。
そのほとんどは役人に収められていたのですが、お正月くらいは贅沢をしたいということで、
和三盆になる手前の「白下糖」を役人に見つからないように、
お雑煮の餅にくるんで食べたというのがあんもち雑煮のはじまりと言われています。

実は私は縁もゆかりもなく四国に移住してきたと思っていたのですが、
移住してしばらくしてから、実はそうではなかったことを知りました。
香川にきてあん餅雑煮を見たとき、
普通の人は違和感を感じるところを私はなんとなく自然に食べることができました。

その時、ふと京都の父の実家で子供の頃に食べた白味噌のお雑煮を思い出して両親に尋ねると、
祖母は昔、高松に住んでいたことがあるからその時の味なのかもねと教えてくれました。

その後、祖父のお墓参りの際、祖母に聞くと
なんといま私が住んでいる高松市花園町に住んでいたんだそうです。
ちなみに花園町の近くには、あんもち雑煮には欠かせない
白味噌をうっている味噌屋「中屋醸造所」さんがあります。

いま、こうして四国の魅力を発信するお仕事をさせて頂いているのは、
不思議な縁に惹きつけられてなのかもしれません。

A surprising mix of flavors for ozoni in Kagawa

An-mochi zoni
Zoni is a type of soup flavored with niboshi and miso, and containing round mochi (rice cakes), carrots and daikon. The unusual thing about zoni in Kagawa is the mochi have anko in them. Some accounts suggest that white miso is used because it was brought from Kyoto to Emperor Sutoku after he was exiled to Sanuki (modern day Kagawa) following the Hogen Rebellion. It is thought that anko was first used in this dish during the Edo period. Wanting to have something special to eat during the New Year, people used Sanuki sugar, one of the three prized products (salt, sugar and cotton) from Sanuki. It is still commonly eaten as a staple during the New Year in Kagawa.

料理レシピ – さぬき味の歳時記（あんもち雑煮）香川県

■材料（5人分）
あん餅　　　　　5個
金時にんじん　　80g
白みそ　　　　　100～130g
煮干しのだし汁　5カップ（もちの量により加減する）
青のり　　　　　少々
大根　　　　　　50g
豆腐　　　　　　1/3丁

■作り方
大根、金時にんじんは3mm位の輪切りにする。
煮干しでだしを取り、(1)を入れて煮る。
野菜が煮えたらもちを入れ、少し柔らかくなったら、白みそを汁で伸ばして入れる。
3cm角の1cmの厚さに切った豆腐を入れて一煮立ちする。
椀に盛り、さっとあぶった青のりをふる。
