高知県本山町の吉野川沿いに広がる赤牛牧場は、希少な「土佐あかうし」の産地として知られています。土佐あかうしは県内で 約2,400頭が飼育され、年間の出荷も 500〜600頭 と少なく、その希少性がブランド価値を高めています。びわ色の毛並みが美しい褐毛和種で、さっぱりとした脂と赤身の深い旨みが特徴。干草や野草を中心とする自然に近い飼育により、小サシが入りつつもヘルシーで、赤身ブームのなか全国で注目が高まっています。本山町は四国山地の真ん中にあり、吉野川の清流と山々に囲まれた環境が魅力です。この恵まれた自然の中で牛たちは放牧され、のびのびと過ごします。放牧場では母牛がゆったりと子育てしており、その環境が肉質のきめ細かさや旨みを生み出しています。

The Akaushi cattle ranch stretching along the Yoshino River in Motoyama Town, Kochi Prefecture, is renowned as a production area for the rare Tosa Akaushi breed. With only around 2,400 head raised within the prefecture and annual shipments of just 500 to 600 head, its rarity enhances its brand value. This beautiful brown-haired Japanese breed boasts a lovely peach-coloured coat, characterised by clean fat and deep, rich flavour in its lean meat. Raised on a diet centred on hay and wild grasses, close to nature, the meat features fine marbling yet remains healthy. It is gaining nationwide attention amidst the current lean beef trend. Motoyama Town lies at the heart of the Shikoku Mountains, its charm lying in its setting surrounded by the clear waters of the Yoshino River and the surrounding mountains. Within this blessed natural environment, the cattle graze freely, living a relaxed life. In the pastures, mother cows calmly rear their calves, and this environment contributes to the meat’s fine texture and rich flavour.

土佐あかうしが幻の和牛と言われる理由
年間約500～600頭（令和5年）しか出荷されておらず、高知県内で約2,400頭（令和5年度）しか飼育されていません。一般的には褐毛牛より黒毛和牛の方が市場ではネームバリューの高さから高単価。一方、褐毛牛は頭数自体が少なく、都心部への流通が少ないため市場価値が上がりづらい。こうしたことから、おいしいのに出まわれない幻の和牛、土佐あかうしと呼ばれる様になりました。

土佐あかうしが旨いと言われる理由
さっぱりとした脂、噛めば噛むほど甘く広がる赤身の旨さ。干草や野草をふんだんに与え品種改良を続けることで小サシが入りジューシーなのにヘルシー。脂質の良さを体験できます。一口食べればわかる、幻の和牛のおいしさ。
