うどん王国・香川で行列を生む“ラーメン仙人”森敏彰。各地を転々としながらラーメンのイロハを伝授し、繁盛店に育て上げる。かつては味を見失い、家族を傷つけた日々があった。迷いの果てにたどり着いたのは「足し算ではなく引き算」という思想。そして家出していた息子と１０年ぶりに再会する。ある日突然ヒゲを剃り落とした仙人。人生の締めくくりとして新作ラーメンに挑む決断を下す。人生ラーメン、遠回りのスープ。

Toshiaki Mori, the ‘Ramen Sage’ who draws queues in Kagawa, the Kingdom of Udon. Travelling from place to place, he imparts the fundamentals of ramen and helps build thriving restaurants. There was a time when he lost his way with flavour and caused his family pain. At the end of his journey of doubt, he arrived at the philosophy of ‘subtraction rather than addition’. And he was reunited with his son, who had run away from home, for the first time in ten years. One day, the Sage suddenly shaved off his beard. He resolved to take on the challenge of creating a new ramen dish as the culmination of his life. A ramen of a lifetime, a soup born of a long detour.

讃岐ラーメン はまんどは、“うどん県”香川ならではの発想から生まれた「讃岐ラーメン」を代表する名店です。創業者の森敏彰（もりとしあき）さんは、香川県内のうどん店を年間1500食、3年間にわたって食べ歩き、うどん文化を中華麺に落とし込むという独自のラーメンづくりに挑みました。

その結果生まれたのが、国産小麦「春よ恋」を使った平打ちの太麺。もちもちとした噛み応えと、すすり心地の良い喉越しは、まさに“うどん県のラーメン”と呼ぶにふさわしい仕上がりです。スープには、香川県・伊吹島産のいりこを中心に、鶏や豚の旨みを重ねたダブルスープを使用。あっさりしながら深いコクがあり、「魚介の旨味を飲むラーメン」とも言える味わいです。透明感のある清湯スープから濃厚な白湯まで幅広く展開し、つけ麺や「かまたまめん」など独創的なメニューも人気を集めています。

1998年には、森さんが「第1回讃岐うどん王選手権」で優勝し、“初代讃岐うどん王”の称号を獲得。ラーメン店主でありながら、うどん文化を極めた人物として知られ、「神の舌」「煮干しの魔術師」とも称されました。香川のラーメン文化は、中華料理店や屋台、うどん食堂の流れを受け継いでいると言われます。はまんどは、その歴史や土地の味覚を現代に再構築した存在です。伊吹いりこ、讃岐うどんの麺文化、瀬戸内の風土――。香川の食文化そのものを一杯に凝縮したラーメンとして、県内外から多くのファンを惹きつけています。

Sanuki Ramen Hamando is a renowned establishment that epitomises ‘Sanuki Ramen’, a concept born from the unique spirit of Kagawa—the ‘Udon Prefecture’. The founder, Toshiaki Mori, spent three years sampling 1,500 bowls of udon from restaurants across Kagawa Prefecture, before embarking on the challenge of creating his own distinctive ramen by incorporating udon culture into Chinese-style noodles.

The result is a thick, flat noodle made from the domestic wheat variety ‘Haruyokoi’. With its chewy texture and smooth, satisfying mouthfeel, it is truly worthy of being called ‘ramen from Udon Prefecture’.

The soup is a double broth, centred on dried sardines from Ibuki Island in Kagawa Prefecture, layered with the umami of chicken and pork. It is light yet deeply rich, offering a flavour that could be described as ‘ramen that lets you savour the umami of seafood’. The range extends from clear, transparent broths to rich, white broths, and original menu items such as tsukemen and ‘Kamata-men’ are also gaining popularity.

In 1998, Mr Mori won the ‘1st Sanuki Udon King Championship’, earning the title of ‘First Sanuki Udon King’. Although a ramen shop owner, he is known as a master of udon culture and has been hailed as the ‘Divine Tongue’ and the ‘Niboshi Magician’.

It is said that Kagawa’s ramen culture draws on the traditions of Chinese restaurants, street stalls and udon eateries. Hamando represents a modern reinterpretation of that history and local flavours. Ibuki dried sardines, the noodle culture of Sanuki udon, and the climate of the Seto Inland Sea—this ramen encapsulates the very essence of Kagawa’s culinary culture in a single bowl, attracting many fans from both within and outside the prefecture.
